Pinterest Woop or Womp: Egg Salad

Alright y’all, new year means a new series. One I actually stick with, and it should be easy, considering I duplicate recipes, DIYs and much more from Pinterest all of the time. So why not document it and share it with you all?

The real question is, do I really think you care to read about egg salad? No, I don’t. HOWEVER, I had been craving egg salad (a childhood staple that I hadn’t had in years) and all my Dad could offer of a recipe was “yeah some eggs, mayo, mustard, relish and some other stuff” … really helpful, Dad. This is when Pinterest came in.

The Pinterest recipe I chose was from Num’s the Word. No particular reason, I liked the picture and she called her recipe “Deluxe” (I’m a sucker).

The first thing I had to tackle was hard boiling the eggs… I am ashamed to say I had never done this before. So to google I go… and I have to say, this was pretty easy and I did not end up with green yolks.

Now that my kitchen smells heavily of eggs… let’s get to making the egg salad.

Ingredients

  • 2 Tablespoons butter, room temperature
  • 3 oz cream cheese, room temperature
  • 2 Tablespoons celery, minced
  • 1 Tablespoon Mayo (or more if desired)
  • 1 teaspoon sugar
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 6 hard-boiled eggs, finely chopped or squished with a fork.
  • Croissants or Bread
  • Dill Pickle Relish (optional)

First thing is first, the recipe called for room temperature butter and cream cheese. Since I did not realize this ahead of time, I tried that one little internet hack… microwave a cup of water, dump out the water and put the cup over the slab of butter and then the cream cheese.

THIS SHIT ACTUALLY WORKED (EXCUSE THE LANGUAGE).

I then creamed together the butter and cream cheese until it was smooth. I stirred in celery, mayo, sugar, lemon juice, pickled relish, salt and pepper until well blended.

I then added the main ingredient… eggs! This is how it turned out, looks like egg salad to me.

I kept the egg salad in the fridge overnight before finally getting a taste. I only did this because Corey and I had plans to go out to eat the night I made the recipe.

This was delicious. To keep it even more childhood-like, I had some Hot Cheetos on the side. 🙂 Very typical childhood Layla. Corey had not had egg salad before, and he loved this! He even took it to work for lunch the next day.

The proof is in the pudding… Corey didn’t think he would like egg salad at all.

All in all, I would definitely say that this recipe is a

WOOP!

If you like egg salad, you will definitely like this. If you do try this recipe… be sure to have gum on hand, your breath will stink.

    If you try a lasagna let me know (saw this in the screen shot photo lol)!! I made one about two months ago for the first time and was surprised at how good it turned out! The toughest part was having a pot large enough to boil the noodles. P.S. I enjoy reading your blog!
