Pinterest Woop or Womp: Mississippi Pot Roast

Hey Hey everyone! I am coming back to you with a Pinterest Woop or Womp! This week we are talking pot roast… but not just any pot roast, today we are talking about Mississippi Pot Roast.

This roast only contains 5 INGREDIENTS! Yes, you heard that right, 5 ingredients and it is so easy to put together.

This was so yummy! We ate it on top of mashed cauliflower and served it with garlic/bacon brussel sprouts. This recipe made sooooo much roast, we had plenty of leftovers. I can only imagine how could it would taste on some toasted buttered rolls. 🙂

So here is what you’ll need to make this roast:

  • 2 1/2 – 3 pound chuck roast
  • 1 pouch of dry ranch seasoning (get hidden valley it’s worth it 😛 )
  • 1 pouch of dry au jus gravy mix
  • 6 tbsp of unsalted butter
  • 1/4 cup of water
  • pepperoncini (as many or as little as you’d like)

You are going to laugh at how easy it is to make this.

Add your 1/4 cup of water to the crockpot and put your chuck roast on top. Add your two seasoning packets.

Now add your unsalted butter and pepperoncinis!

Cook on low for 8 hours!

& serve it up! I would recommend on mashed potatoes, but mashed cauliflower was the lower carb option for us. The meat is pretty salty, so I wouldn’t recommend adding any extra salt, especially if you are going to serve it on top of mashed potatoes/cauliflower. The meat was perfectly tender and overall super flavorful.

So what do you think? Sound easy enough? I loved the roast and so did Corey (see my proof below).

Try to ignore his red eye. He isn’t really the “strike a pose” types. But he honestly loved this whole dish, including the mashed cauliflower SAY WHAAAAAAAA?! 10/10 highly recommend you try it.
