With the snowpocalypse and the bitter cold here in Cincinnati, Corey began craving pot roast. I have never made pot roast before so of course I run to Pinterest to grab a recipe.

The images looked delicious, and the recipe sounded easy, good enough for me.

So I began by seasoning the meat with kosher salt, pepper and dried thyme. I liked that this recipe called for browning the meat. Delicious, crispy pieces of meat is something I live for in any recipe. Let the browning begin.

Next I peeled and cut the potatoes and carrots. I also peeled some garlic. The recipe calls for minced garlic, but I decided to just throw a few cloves in – I also love giant pieces of garlic.

Near the end of this cooking process came my favorite part, making the thick gravy. I mixed cornstarch, water and a little bit of the broth from the slow cooker and cooked it in a pan to make the gravy. YUM!

The pot roast came out delicious and was a hit for Corey and myself. It was quick and easy – perfect for a Friday night on a cold winters day.
